Selected Organic 65% Verdejo and 35% Sauvignon Blanc from cool, high-altitude 750-800m, 15-20 year old trellised vines using organic farming methods, from nutrient-poor and limestone-rich soils, where rainfall is scarce. Harvested at night first two weeks September and then fermented at low temperature for 2 weeks, aged a further 3-4 months on fine lees with regular batonnage. Fresh, crisp with intense citrus, lime and tropical notes with a persistent finish. Food-friendly, enjoy with grilled salmon, seared scallops, chicken, summer salads.
