The grapes for this wine are selected from the best vineyards in the Marsala area. This vineyard is one of the most characteristic and typical of this area, with a predominance of white grapes. Vine training is by traditional Spalliera system. The grapes are hand-picked, employing various canopy management (vine training) techniues due to the fact that the bunches hit the peak of maturity in mid-September. Following destemming , the grapes are gently pressed with a pneumatic press. Fermentation takes place at controlled temperatures not exceeding 18°C for approximately 3 weeks. Malolactic fermentation does not take place so that the wine retains all of the grape’s natural acidity.

Straw yellow shot with green; very full and intensely fruity on the nose with exotic fruit such as melon and banana, featuring hints of citrus reminiscent of grapefruit. On the palate it is very well-balanced, with a good acidity, backbone and length.

The vineyards lie in the hills of the Riesi area, between Ragusa and Agrigento, on the northern Gela plane. Harvest normally takes place between the second part of September and early October. The grapes are destemmed and gently pressed. With the addition of selected yeasts, fermentation takes place at controlled temperatures, not exceeding 28°C. Frequent pumping over takes place in the early stages of fermentation in order to ensure optimum colour extraction and soft tannins. After fermentation, the wine is racked and the malolactic fermentation takes place in order to obtain perfect balance and harmony.
