About the Vineyard
The Grand Vin Cirque Nord comes from the selection of a plot at the top of a hill in the shape of an amphitheater, with remarkable variegated clay terroir. It benefits from a northwest exposure particularly conducive to the vertical expression of Gros Manseng, le Petit Courbu and le Petit Manseng benefit from a softer and sunny South-West exposure.
Cirque Nord will be able to express itself young, on freshness, where the crunchy Manseng is subtly enhanced by notes of dried fruits and spices. It will then patiently open up to a mineral force, a harmony of mouth and a long, truffled finish in the next ten years. It will then become one of the greatest white wines of the Southwest.
Food and Wine Pairing
When young, it will go perfectly with noble fish and seafood (a bar of just golden line, scallops with citrus zest), and fine cheeses with pressed pasta (Comté, Saint-Nectaire farmer).
After a few years of aging, it will be the ideal partner for a rack of veal studded with truffles, a Christmas lobster and a cheese platter with washed rind (Mont d’Or or Munster).
