Perfectly ripe grapes are harvested when temperatures are cool in order to avoid oxidation and preserve freshness. At the cellar, the grapes are destemmed and pressed in an inert atmosphere to preserve the lovely aromas of this varietal. The juices then macerate for a few days at a very low temperature. A daily stirring on its fine lees adds complexity and pure aromas to the must. After fermentation, the wine stays on its fine lees for three months, gaining a velvety texture.
